Reaping the Harvest (A Backyard Omelet)














Combine 3 eggs fresh from the nest, a homegrown onion from the pantry, a Roma tomato fresh off the vine, and a jalapeƱo pepper straight from the bush.  Season with salt and pepper.  Cook over medium heat in a cast iron skillet with a touch of olive oil.  Saturday morning breakfast!
